Backround of the project: In 1998 dairy farmer started small scale on-farm processing to add value to the milk produced. Main products were flavoured cotton cheese, yoghurt and cream. Due to low market prices and high financial obligations, pressure to get more revenue increased and lead in 2008 to the decision to develop dairy capacity, expand product list and increase product quality. Cheese production was chosen as an additional product line, mainly because of lower risks at marketing and delivery.
No advisory assistance on this topic was available in Estonia, so farmer took the initiative and visited Swiss, Swedish and German dairies, to learn the production and marketing basics, evaluate risks and plan the initiative in details. (Some help was offered by Valio dairy in Estonia). Important consideration was to promote locally produced, environmental-friendly and healthy products from small scale dairy farm.
All recipes and flavours were developed in dairy, no preservatives are used.
Objectives of the project: To ensure the stable quality of dairy products by modernizing the full dairy equipment according to the requirements of product lines.
Main activities: Procurement and purchase of equipment, installation and setting, incl. automatic equipment tuning and stainless steal welding works.

Equipment was not purchased in one full set, but combined piece by piece from different suppliers to achieve the best fit with needs and value for money.
Output and results indicators: 2 new employments
Experiences/lessons learned: Under these circumstances, where know-how and professional advice is not available, high competence, commitment and initiative of beneficiary is essential.
Market situation demands even bigger variety of different product flavours but only in small quantities. This is the reason why manual work could not be eliminated, as it was initially planned and high output capacity equipment cannot be used in full potential.
